Quick and easy to prepare.

I love food but I don`t like ways of preparing that take ages! I`m not a vegetarian, actually (... although I`m not a big fan of meat either).



Anyways: There`s a cool recipe that tastes nice, it`s vegetarian and ... it is easy and quick to prepare.



Let`s call it Fried Veg alla Moni ;). Just kiddin`. Call it whatever.



Things you need:

500 g potatoes

2 small aubergines

2 small zucchinis

5-6 tomatoes

fresh mushrooms

olive oil

herbs such as basil and majoran (fresh, if possible)

salt and pepper



What to do with this:

- boil potatoes until they are almost cooked

- cut potatoes and other vegs into little pieces and fry

-steam (not too much oil!) until done

- therefore close the pan with half of the lid- add herbs, salt and pepper



É voila! A tasty but healthy and quick meal! Enjoy!

here's my fav with potatoes:

Baked Potatoes (Spanish):

Quater the potatoes (don't peel them!), put them into a casserole, add pressed garlic, sea salt, pepper, some herbs (such as fresh rosemary, thyme etc) and olive oil. put it in the oven for 60-75 minutes at 200°C.



Prepare a dip:

mix natural yoghurt with some tomato puree, salt, pepper, mustard and a teaspoon of oliveoil.

salmon-spinach and spaghetti

this is an easy and quick recipe for a healthy lunch or dinner with friends.

I have some vegetarian friends who eat fish  - so this might be a good alternative for a "mixed group":



you need:

spaghetti

salmon

spinach

small tomatoes

cream

salt, pepper

olive oil

parmesan



1) cook spaghetti

2) frie salmon and frozen spinach in some olive oil in a pan

3) add cream and wait until salmon and spinach are defrosted

4) quarter the tomatoes and add to pan

5) season with salt and fresh pepper

6) grate parmesan and enjoy with your meal!



it will take you about 15 minutes! the big advantage is that you don't have to cut anything (except for the tomatoes)!

Cool very good, my group seems to be a success. Here is a recipe of a nice easy prepared salad, it's perfect to serve it as a side dish to your main course.

You need:

- corn salad

- sunflower seeds

- balsamic vinegar

- olive oil

- sugar and salt



First of all you wash the salad and put it in a salad bowl, add some olive oil, a tiny bit of water and salt but more sugar. Now you prepare your dressing: Fry enough sunflower seeds in a pan so that they look crunchy. Take a cup and pour balsamic vinegar in it, add a pinch of sugar and add the fried sunflower seeds.

Now you just pour the dressing over the salat and enjoy it :)!
